There are so many options, and you can totally justify spending tons of time and energy on it...or spending very little, depending on the night. We kinda winged it (which I personally think is the best way to go), but here are what I would say are the recipes:</div>

<span style="font-size: large;"><b><u>Grilled Lemon-Rosemary Marlin:</u></b></span></div>
<div class="separator" style="clear: both; text-align: center;">
Preheat your grill to about 350* F and make sure to rub olive oil on the grills (any fish, even a steak-y fish like marlin, is flaky and should be ensured a clean removal from the grill). Season one side of the fish with fresh minced rosemary leaves, lemon zest, salt, and pepper, then lay face down on the grill. Once all your filets are down, season the other side. Let grill for roughly 3 minutes, then flip. Once the filets are cooked all the way through, take off the grill and douse in lemon juice, which keeps the fish light and flaky. (If you want typical grill marks, rotate the fish from the 10:00 to the 2:00 position halfway through grilling the one side). Serve with a few rosemary leaves and lemon zest on top for garnish.</div>

<span style="font-size: large;"><b><u>Fennel and Leek Sautee:</u></b></span></div>

Chop the vegetables in 1 inch thickness, having more fennel than leeks as it gives the stronger anise flavor. Put in a sautee pan with tarragon vinegar and olive oil. Season with minced cilantro, minced tarragon leaves, salt and pepper. Bring liquids to a boil then simmer for roughly two minutes. Add a pinch of sugar. When most of the liquid is gone, about 10 minutes later, turn up the heat to caramelize the vegetables until you deem ready to serve.</div>

<span style="font-size: large;"><u><b>Roasted Potatoes with Hazelnut Pesto:</b></u></span></div>
<div class="separator" style="clear: both; text-align: center;">
Quarter redskin potatoes and toss in a bowl with the juice and zest of a lemon, salt, pepper and olive oil. Spread out on a roasting pan and roast at 425* for 30 minutes. When you put in the potatoes, put in the hazelnuts as well and roast for 10 minutes, flipping (or rolling) halfway through. While the hazelnuts are roasting, put garlic cloves, salt, pepper, olive oil, lemon juice, lemon zest, oregano leaves, mint leaves and basil leaves in a food process. Shell the roasted hazelnuts, add to the food processor and process all. If it seems too thick, add oil or lemon juice. If it is too watery, add more hazelnuts. Take potatoes out of the oven and top them with the pesto.</div>

I apologize for the lack of specificity in this recipe. I know there are no measurements, but that's why they say "baking is a science, cooking is an art." Do what feels right to you and go with the flow! If you mess up, its all a part of the experience. My dad and I made this for ourselves and my mother, so I would recommend this for a small weekend or weeknight meal with the family. I know the club will not regularly do a lunch meal for its members, however, sometimes lunch food can be the best kind! And you never know, maybe one Saturday we will substitute a co-op dinner with lunch. With both my parents working, I have to fend for myself for lunch, which gives me the best opportunity to experiment! (But, I am a creature of habit, so I tend to have very similar things each day) Here are a few of the lunches I have prepared for myself, and hopefully everyone can learn from them!<br />

Here is a picture of my salad. They are so easy to make and you have UNLIMITED amounts of vegetables (and other ingredients!) to choose from. I have used this summer cucumbers, beets, chick peas, artichokes, peppers, onions, tomatoes, dates, raisins, dried apricots, cashews, almonds, sunflower seeds and celery, just to name a few. THEN! You can choose from tons of dressings-I personally just like vinegar, which brings out the natural flavor of the veggies- tons of types of meat to go on top (salmon, skirt steak, grilled chicken, etc.) AND tons of lettuce (I generally like spinach, but you could go with bib lettuce (a sweeter flavor) red leaf (a little more bitter) iceberg, and many more!</div>

Here are cut up dates with cashews on top of cottage cheese. I would recommend cottage cheese with any type of trail mix. It is a lean protein that requires an acquired taste, but I feel that it "skinnies" up any fruit-nut combo that I like (and its delicious!)</div>

Okay, soup from a can-boring right? NO! You can totally call yourself a chef with a few additions to canned soup. This is split pea, so I added mint, a flavor which is traditionally paired with peas, and a few tortilla chips to add some textures. I also often add diced mushrooms, spinach, and oregano to my tomato soup. This spices it up quite a bit.</div>

This is what I call the everything sandwich. I'm sure you can see why. This sandwich had garlic hummus on toasted 7-grain bread with spinach, sliced tomatoes, bread-and-butter pickles, sliced turkey, smoked salmon and a fried egg right on top. It was also the MESSIEST sandwich I've ever eaten! Being gluten intolerant, I don't have much practice eating a sandwich anyway-but the fried egg and the slippery smoked salmon definitely didn't help. (Tip: when adding a fried egg, make sure most things are warm-it tends to lose flavor as it cools)</div>

Feeding 20 plus people can always pose a bit of a challenge, however, if you're going to take on this feat of cooking, pizza is the way to do it. Its fast, simple, and everyone loves it. My family has always been a big fan of the Boboli pizzas-- whenever I was in grade school and my brother and I had a million activities going on, we'd grab a slice of Boboli and head out to the next thing on our list. However, we are all "growed up" now and I decided to share this delicious memory with my extended family on our vacation in the Outer Banks. We had 16 people eating the pizza so we made 4 big pies and 4 little. Here are all of our ingredients:<br />

We baked two big and two small at the same time as to maximize efficiency, which I would recommend, however, make sure you keep the light in the oven on because they WILL cook at separate paces given the differing sizes and toppings. (P.S. Feta never looks melted, but it is!)</div>

It was such a simple dinner and we had such a blast making it! Even my brother and mother, whose skills in the kitchen are...let's just say...unmatched by other aspects of their life, did their part. And the opportunities are endless! I didn't even try a hawaiian pizza or a taco pizza or a breakfast pizza...and the list goes on and on...and on. This is a great colorful summer supper that anyone can make! It is relatively quick to prepare and even faster if you have a rotisserie chicken. The chicken salad is full of flavor but not too spicy for our delicate taste buds and is balanced nicely by the refreshing cucumber and tomato.</div>

<span class="Apple-style-span" style="color: #e69138;">Curried Chicken Salad:</span></div>
<div>
3 whole cooked chicken breasts (can be roasted, grilled or rotisserie; I grilled mine in a foil packet with onions, olive oil, salt and pepper)</div>
<div>
1 1/2 cup mayonnaise</div>
<div>
3 Tbs. curry powder</div>
<div>
1 cup medium-diced celery (about 2 large stalks)</div>
<div>
1/4 cup chopped scallions</div>
<div>
1 cup whole roasted, salted cashews</div>
<div>
1/2 cup slivered almonds</div>
<div>
1 1/2 tps salt</div>
<div>
1Tbs cayenne pepper</div>
<div>
1 apple</div>

1. Remove the skin of the chicken and cut into bit size pieces.</div>
<div>
2. For the dressing combine the mayonnaise, curry powered, salt and cayenne pepper in the food processor until smooth (feel free to add more or less cayenne pepper depending on how spicy you like your curry!)</div>

3. Chop apples into bite size pieces and combine with chicken.</div>
<div>
4. Add dressing to chicken and apples.</div>
<div>
5. Add the celery and scallions.</div>
<div>
6. If you have time, refrigerate for a few hours</div>
<div>
7. Add cashews and slivered almonds and serve at room temperature in a boat of romaine lettuce for extra crunch!</div>

1/4 of a red onion</div>

1 Tbs. red wine vinegar</div>

1. Seed, peel and chop a cucumber to desired size. Combine with 1 chopped tomato.</div>

2. Combine red onion, olive oil and red wine vinegar. </div>

I'll begin with a quote from one of my favorite movies: "Aragorn: 'Sam, do you know the Athalas plant?' Sam: 'Athalas?' Aragorn: '[Otherwise known as] kingsfoil' Sam: 'Kingsfoil! That's a weed!'" As we all know, this so called "weed" saves Frodo's life, as does the amiable and heroic character, Samwise Gamgee the Brave. (If you haven't noticed by now, not only am I a cook, but an extreme nerd!) So the plants that may not look the best, or have the greatest reputation, could save a dish from near disaster. And although we live in Ohio where the winter is harsh, and we must make due with the dried stuff for the greater half of the year, fresh from the garden is always better!<br />

I am a rising sophomore from a suburb of St. Louis, MO and will most likely major in Biochemistry.<br />
I decided to join the Food Coop because I love cooking and especially eating! This summer I have been having a lot of fun making vegan desserts (even though I am not vegan at all). If forced to choose, I would have to say that barbecue and Italian are my favorite types of food. I also have a soft spot for ice cream :)<br />
Other than food, I love playing soccer and am on the soccer team at Kenyon. I also played the violin for 10 years and recently took up the ukulele (strictly recreationally though). Due to my increased amount of free time this summer, my reality TV addiction has manifested into a bit of a problem. I am not proud to say it but a few of my favorite shows are Sister Wives and Toddlers and Tiaras (a little disclaimer here: I in no way approve of how these children are being displayed, just think it's interesting to see this side of life). My other obsession is my cats. I have two, Herman and Horton, and at risk of sounding like a potential cat lady, I must say thus far they are the loves of my life! My name is Lizzie and I am a rising sophomore at Kenyon College. I am from Chagrin Falls, Ohio, a suburb of Cleveland. My family means more to me than anything else in the world and I love them to death. I run on Kenyon's cross country and track team (so by default, I love distance running). Another default of that is that I love to eat! However, not as much as I love to cook :) I've played piano since I was 5 and Chopin is my favorite composer. I will most likely be majoring in math since I love it too and maybe would like a future in computer science. People get very confused when I say I am considering both culinary school and graduate school in comp-sci for my post-graduate career. Other random tidbits: my favorite food is salmon, my favorite animals are elephants, my favorite color is purple and I like to read a lot.<br />
In addition, although I like art and I really enjoy drawing, I dislike photography and my pictures of food are horrendous. So please forgive me, but I will try my hardest to make the food I cook look delicious!<br />

And I gotta say, I never thought that I would be making one of these. However, after becoming an avid chef and using blogs for most of my recipes (along with my biblical magazine, Food Network Magazine), I figured it was time to begin documenting my creations.<br />
Not that they are anything spectacular, per say, but I may have a future in the business and would like to have proof that I cooked, baked, whipped, frapeĀ“ed all of these things. In addition to this, I am the new president of the Kenyon Food Co-op and I would like all our members in the on-coming 2012-2013 academic school year to have incentive to join us! Other than the quite obvious reasons that cooking is awesome and fun and who doesn't enjoy a tasty meal now and again?<br />
